Datil peppers are part of the history of Florida, and St. Augustine produces the majority of datils cultivated in the United States. They fall just below habañero peppers on the Scoville scale, but have a sweet fruitiness that belies the heat. This jam is an amazing accompaniment to pork. It makes a delicious topping for ice cream or pound cake. Mix in a bit of soy sauce and you have a yummy Asian-style dipping sauce.
