Remove the corned beef brisket from the package. If there is a spice package, discard or save for another use. Rinse and trim some of the fat from the brisket. Place the brisket in a slow cooker with the fat side up. Sprinkle the Green Man Gourmet Corned Beef Seasoning over the brisket.

Remove the corned beef brisket from the package. If there is a spice package, discard or save for another use. Rinse and trim some of the fat from the brisket. Place the brisket in a slow cooker with the fat side up. Sprinkle the Green Man Gourmet Corned Beef Seasoning over the brisket.

Whisk together the water, orange juice, and molasses. Stir in the tapioca and pour over the brisket. The tapioca will not be dissolved.

Cook on low heat for about 8 hours, occasionally basting with the juices. Slice across the grain and serve.

1. Corned beef is salt-cured, so the juices tend to be quite salty. If you would like to make a sauce, you might want to start from scratch with a basic gravy and add some of the juices to taste. Melt 2 tablespoons of butter. Whisk in 2 tablespoons of flour and cook over medium heat until lightly browned. Slowly add 1 1/2 cups of beef broth, whisking to avoid lumps. Add the juices from the corned beef to your taste. Cook until nicely thickened.

2. For a side, try this: Thinly slice 1/2 a head of cabbage, 1/2 a fennel bulb, 1 carrot, and 1 apple (peeled). Combine in a large skillet with a 1/4 cup of water and several spoons of the corned beef juices. Sprinkle with a tablespoon of caraway seeds. Cover and simmer for 20 to 30 minutes, stirring occasionally.
